Making the most of 'larder on doorstep'

SOME of the region's top chefs will be showing visitors to next month's Countryside Live event how they can beat the credit crunch to produce top quality meals using Yorkshire produce.

'Chefs on a Shoe String' is the highly topical title for the demonstrations which will take place at the event's Cookery Theatre.

The theatre is one of the highlights for Countryside Live which takes place on the weekend of October 25 and 26 at th
e Great Yorkshire Showground.

The cookery demonstrations from some of the region's top chefs, will combine fantastic flavours and ingredients with innovative and imaginative recipes.

Organised and hosted by the well-known Yorkshire cook, broadcaster and food specialist, Annie Stirk, who said: "We will also be making use of the great cuts of meat which give us delicious braises, casseroles, daubes and pot roasts – real comfort food but with an eye to watching the pennies."

Among the chefs appearing will be Richard Jones of Bettys Cookery School. Before returning to Yorkshire, Mr Jones cooked for superstars such as Tina Turner, Phil Collins, The Who and The Rolling Stones, whose infamous guitarist Keith Richards famously refused to go on stage until he had eaten Richard's Shepherd's Pie.

Under the heading 'Best of Bettys' he will be demonstrating dishes which appear on the menus at Bettys Café Tea Rooms, including their renowned Yorkshire Curd Tart.

Andrew Pern, chef and patron of the award-winning Star at Harome, said: "In Yorkshire we have got such a brilliant larder on our doorstep. I was born and brought up in Yorkshire and as such my restaurant is very much involved in local producers and local suppliers.

"We are a Michelin starred restaurant for the food we serve which is all local produce.

"It is a particularly great time of year at the moment too, with a lot of game on the menu."

Another big name giving demonstrations will be Rob Green, the owner and chef of Whitby's Green's Restaurant.

Mr Green said: "With the price of food going up we need to show people that you can cook cheaply and nicely and hopefully this demonstration will go some way to achieve that.

"We are fortunate here in Yorkshire that we have got the sea, the moors and the countryside all in one place producing really good stuff."

Also appearing will be Delifresh Specialist Foods chef Robert Ramsden, Hilary Finney of Harmony House Cookery School near York, Mohammed Aslam of the award-winning restaurant group Aagrah, Father Rainer of Ampleforth Abbey Orchards and Prett Tejura of Curry Cuisine.

There were also be a rare joint display from Rudding Park Hotel's executive chef Stephanie Moon and managing director Peter Banks who will be showing how to make fantastic chutney using ingredients straight from the farm gate and countryside hedgerows.
