A breath of fresh air: cheese from Wensleydale
YOUR love of Wensleydale cheese has brought a small avalanche of recipes, comments and serving suggestions - from Wensleydale mash to a simple hearty hunk served with crisp apple.
But how is the cheese created in the first place? It's by using hand-crafting production methods that have remained largely unchanged for centuries.
We went behind the scenes at the Wensleydale Creamery in Hawes to see the labour-intensive art of cheese-making in action. We also met one of the local dairy farmers on whom the cheesemakers depend.
Finally, we met some Wensleydale devotees who told us why a cheese made elsewhere 'just isn't Wensleydale'.
