Bettys brings back an old favourite as craft bakery turns its thoughts to Easter
CHRISTMAS is still in full swing, but already staff at Bettys Craft Bakery in Harrogate are turning their thoughts to Easter.
In 2010 the team of seven chocolatiers are bringing back the Bettys Badger, a much-loved old favourite, designed by Lesley Norris, who is responsible for the creation of Bettys specialties.
The Chocolate Room has pride of place at Bettys Craft Bakery. Before Easter the chocolate team will handcraft around 450 chocolate badgers – each one taking about an hour to make using the finest Swiss chocolate.
First, the chocolatiers paint white and dark chocolate into the mould with a fine brush to make the badger's face. Then, a double layer of milk chocolate is applied throughout.
Once out of the mould, the badgers are hand brushed with tempered white, dark and milk chocolate to give a realistic effect of fur. The eyes are piped and the nose cut from marzipan and then coloured with chocolate.
