Food Matters: Ramus backs fish campaign

YORKSHIRE's Ramus Seafoods has joined Hugh Fearnley Wittingstall's Fish Fight Campaign. Ramus managing director Jonathan Batchelor says:"The campaign has been an eye-opener for many but those of us in the fish trade have been aware of this shocking practice for years.

"Nothing shocks us more than the waste of quality fish, and to say this is done in the name of conservation makes it worse"

Ramus Seafoods champions the use of more sustainable fishing methods such as long line and pole fishing, and Jonathan thinks it's important that we take up the challenge to try new species.

"For years, we have been trying to sell some of the more unusual fish but we find that consumer demand has been polarized around two or three species. I hope that with this media focus consumers will go out there and try something like coley and pollock."

Simon launches tasting menus

Simon Crannage, the Executive Chef at Swinton Park, has launched two new Tasting Menus at Samuel's Restaurant at Swinton Park. This coincides with the start of the 10th birthday celebrations for Swinton Park, which will be running throughout 2011.

The Signature Tasting Menu is seven courses and costs 60, and the Deluxe Tasting Menu is 10 courses and costs 70 (both include coffee and petit fours). www.swintonpark.com
