Quick Recipe: Citrus Chinese Leaf Salad

Scientists have found that radishes are even healthier than strawberries and have similar anti-cancer properties to broccoli.

Crisp and juicy pink English radishes come into season at the end of April – the first of the home-grown field salad vegetables to become available.

Great to add to salads, lunch boxes and to add texture to stir fries, English radishes will be available from St George's Day

(April 23).

Serves: 4-6

Preparation Time: 6 minutes

300g Chinese Leaf, shredded

2 oranges, peeled, quartered and sliced

8-10 radishes, trimmed and sliced

For the dressing:

2 tablespoons orange juice

4 tablespoons sunflower oil

Sea salt and freshly-ground black pepper

Arrange the orange and radish slices on a bed of Chinese Leaf. Whisk together the dressing ingredients and pour over the salad.
