Quick Recipe: Eve's Pudding

1 ½ lb cooking apples such as Bramleys peeled and cored75g granulated sugar120ml waterFor the topping50g butter75g caster sugar2 eggs100g self-raising flour3 tbsp Toasted flaked almonds

Preheat the oven to 190C, 375F, Gas mark 5 and grease a shallow ovenproof dish with some of the butter.

Cut apples into 1cm/-inch cubes. Place in a saucepan with the sugar and water and cook over a medium heat, stirring from time to time, for 5-10 minutes until the apple begins to soften.

Cream together the butter and sugar then gradually beat in the eggs. Add the flour and beat well with a wooden spoon.

Transfer the apples to the ovenproof dish then spread the cake mixture over the hot apples, spreading evenly.

Sprinkle with flaked almonds and bake for about 35 minutes until risen, golden brown and firm to the touch.
