Quick Recipe: Ham and courgette mini pizza tarts

Cooking/prep time: 30 min150g cooked ham, chunky off cuts or thick slices500g pre-made shortcrust pastry2.5ml tomato purée, per pizza tart175g cherry tomatoes1 courgette, thinly sliced1tbsp olive oil4oz Mozzarella cheese, roughly tornPre-heat the oven to Gas Mark 6, 200ºC, 400ºF.

Roll out the pastry and cut into 9cm (3in) circles. Place these on to baking sheets lined with non-stick paper. Top each round with 2.5ml ( tsp) tomato pure and spread over the pastry.

In a bowl, toss the ham, tomatoes and courgette slices together in the olive oil.

Take generous handfuls of the ingredients and place them on to the pastry rounds and then top with a small piece of mozzarella cheese. Bake the mini pizza tarts in the oven for 15-20 minutes until golden brown.
