Quick Recipe: Mother's Day chocolate rum truffles

Makes approx. 20 150g good quality plain chocolate150ml double cream2-3 tbsp rumIcing sugar for dustingCocoa powder, chocolate vermicelli or flakes for coating

Break chocolate into a large mixing bowl and set aside. Place cream in a small saucepan and heat to almost boiling. Immediately pour over the chocolate pieces and mix with a wooden spoon until chocolate has melted.

Add the rum and mix vigorously until all ingredients are well incorporated into a shiny mixture. Set aside for 1 to 1hr until the mixture has firmed up. Line a baking sheet with parchment paper. Dust hands with icing sugar, take a teaspoonful of chocolate mixture and roll into a ball the size of a small walnut.

Roll it in the cocoa powder or chocolate vermicelli/flakes to coat on all sides and place on baking sheet. Repeat until all the mixture is used, spacing balls on baking sheet so they don't touch. Place in the fridge for 4-8 hours until set.
