Chatsworth House recalls pates and rillettes amid concerns over control of potentially fatal toxin

Chatsworth House at Bakewell in Derbyshire is recalling various types of pates and rillettes because of concerns over the manufacturer’s procedures in place to control Clostridium botulinum.

The products are manufactured by Cornish Charcuterie and relate to the recall they undertook on Tuesday.

A statement on the Food Standards Agency website reads: “Manufacturing controls necessary to ensure the safety of the products listed above could not be demonstrated satisfactorily by the product manufacturer.

“The issue relates to controlling factors to prevent the growth and toxin production of Clostridium botulinum. Botulinum toxin may cause a serious form of food poisoning called botulism and can be fatal.

“A recall from customers is being carried out as a precautionary measure.”

Brian Turner, Chatsworth Farm Shop buyer, said: “Cornish Charcuterie manufactures a range of Chatsworth branded pates and rillettes for the Chatsworth Estate Farm Shop. On 15 August 2017 Cornish Charcuterie contacted Chatsworth to advise that they believed one of their production machines may not have been reaching the necessary temperature during the manufacturing process, and therefore as a precautionary measure, the affected products should be removed from sale, and a recall notice issued. This was done immediately.

“Chatsworth adheres to high standards of health and safety in the sourcing of all its food products and their sale in the farm shop. Incidents of this nature are extremely rare and Chatsworth is in discussion with Cornish Charcuterie to make sure it does not happen again. The health and safety of our customers is of paramount concern so these products will not return to sale until we are confident appropriate measures have been taken and the products are safe to eat.”

The products affected – all branded as ‘Chatsworth Delicatessen’ are Mushroom Pate, Spicy Bean Crush Pate, Salmon Pate with Lemon, Salmon Pate with Horseradish and Dill, Duck Rillette with Cranberries, Chicken Rillette with Lemon Oil and Cracked Black Pepper, Mushroom Pork Rillette and Pork Rillette with Sloes.

No other Chatsworth House products are known to be affected.
