Victoria Woodhall, 31, was attacked with a knife on Windsor Crescent in Middlecliffe on Sunday evening.
Victoria had two sons and a daughter and was a nurse at Rotherham General Hospital, having studied at university to become an operating department practitioner.
She was also a keen runner who had recently completed the Harewood House Half-Marathon shortly before the coronavirus lockdown was imposed.
A 40-year-old man has been arrested on suspicion of murder and remains in custody.
Victoria's friends Donna Wetherall and Kelly Sims have set up a Gofundme page to raise £2,000 to cover the costs of her funeral.
Donna said: "She will be deeply missed by friends, family and her children. She was lovely and caring, always helping others, lived for her children and sadly she was taken away at the young age of 31
"You will be sadly missed by Donna, Leanne, Chelsie, Kelly and everyone else who knew you. RIP beautiful."
