End of an era for the Bath chap

A meat delicacy known as the Bath chap could become a thing of the past owing to red tape.

The obscure dish which has been made for centuries could disappear as one of the last remaining butchers to make it is giving it up because of the growing amount of paperwork.

Richard Guest, 40, will cook his final batch of chaps – made from pigs’ cheeks and tongue – today at Brittan’s Butcher in Bristol.
