Butcher gets things rolling with culinary revelations

LEADING chefs from across the region are sharing some of their culinary secrets at the Great Yorkshire Show.

Paul Nicholson, the head butcher at the Yorkshire Agricultural Society’s regional food shop, kicked off the demonstrations yesterday by creating his signature venison dish at the Game Cookery Theatre.

Celebrity chef Rosemary Shrager was back at the show for the third year running holding masterclasses using rabbit and venison. She was joined on stage by ferreter Simon Whitehead and Ian Donaldson, of the British Deer Association.

TV presenter Kirstie Allsopp also teamed up with Michelin star chef James MacKenzie from The Pipe and Glass, at South Dalton, near Beverley, to cook the perfect Yorkshire pudding.

Chefs making their debuts at the show include 17 year-old Josh Angel from Wakefield, who runs his own catering company, and Matthew Lockwood, of Lockwoods in Ripon.

Another feature of this year’s show is the flagship food shop and cafe, Fodder, championed by the Yorkshire Agricultural Society. Fodder is Britain’s first charitable food hall with all profits re-invested into the rural community.

Managing director Heather Parry said: “One of Fodder’s successes has been proving that local food is not a luxury and in fact is often cheaper than supermarkets on a number of staples.”
