David, founder and manager of Lishman’s of Ilkley, is captaining the British team for the second year running. The team of six UK butchers is taking on counterparts from Australia and New Zealand in a test of skill and invention.

“As well as finding a winning team – who will have bragging rights until the next time – the competition is a chance for youngsters with an interest in the art to see some of the best butchers in the world producing some of their best work,” said David.

“The competitive aspect is the focus for all three teams; we each want to win and hold the title for the year ahead.

“But this is also an opportunity to share good practice, and for youngsters who want to learn, to learn from the best. ”

Excitement about the competition was high with much interest coming through social media channels, and the #Butchery3Nations hashtag generating national support for each of the teams.

The winner is set to be announced later this week in London.
