Experimental chefs from Bompas and Parr have created a Yorkshire Pudding flavour ice cream to celebrate York being included as one of the top ten most searched for ‘staycations’ on discount site Groupon.

The unusual recipe involves combining six freshly baked puddings with milk, cream, caster sugar and eggs before freezing.

Other flavours created as part of the staycation campaign include a Cornish pasty flavour to celebrate St Ives and a Guinness flavour to represent Dublin.

Yorkshire pudding ice cream recipe

Ingredients:

 6 large freshly baked Yorkshire puddings, cut into small pieces

 1lt of whole milk

 500ml double cream

 300g caster sugar

 6 eggs

Method:

1. Start by adding the milk, cream and half the sugar to a large pan, heat gently and continuously stir until all the sugar has dissolved, do not boil.

2. Add the eggs and the rest of the sugar to a large bowl and whisk until pale in colour.

3. Using a ladle and continuously whisking add the warm milk to the beaten eggs, always whisking and pouring the milk mixture in slowly, this will prevent the eggs from scrambling.

4. Now that the ice cream base is made add the pieces of Yorkshire pudding and mix together. Cover the container and leave in the fridge for at least 3 hours for the flavours to infuse.

5. When ready pour the mixture into a ice cream machine and churn for around 2 hours or pour into a container and place into a freezer for at least 4 hours, stirring the mixture occasionally.
