DO any people from the Department of Health, or environmental health, ever watch cookery programmes on the television?

What an appalling standard they promote to trainee catering students et al.

Nearly 60 years ago, I would not have been allowed into a kitchen to work unless wearing whites (jacket and necktie), checked trousers and either a toque, white trilby or white bakers’ hat.

The headgear was to stop the potential of hair contaminating the food and the kitchen clothing to prevent pollution from everyday clothing. I’ve even known chefs with facial hair being made to wear a gauze over their beard.

For many catering establishments, this is still the practice.

Why then do some of these alleged celebrity chefs toss convention to one side and disregard this basic form of hygiene? Dare one question then if they wash their hands after using the loo?
