Preparing for a green Christmas

Twenty three per cent of sprout sales are generated in the ten days leading up to Christmas Brussels sprouts, along with broccoli and other brassicas, contains sulforaphane, a chemical believed to have anti-cancer properties.

Boiling reduces the level of the anti-cancer compounds, but microwaving, stir frying and steaming does not lead to significant loss.
