Food Matters: A taste of the good old days

A North Yorkshire chef is resurrecting the secret recipe for romance this Valentine's Day. David Pybus, head chef at Goldsborough Hall, will recreate a 17th-century recipe with a modern twist to get couples in the mood for love.

The ingredients will be added to the chef's amuse bouch and mark the start of the Hall's seven-course gourmet Valentine's Day dinner. "They say the way to a man's heart is through his stomach. For centuries, various foods have been known for increasing sexual desire, including oysters, truffles, chocolate, chillies and caviar." The amuse bouch will consist of a blend of spices, including ground cinnamon, ginger, rosemary and nutmeg but the exact recipe will remain a closely-guarded secret. The ingredients for Pybus's recipe derive from Aqua Mirabilis, a strengthening tonic which was also used as an aphrodisiac in the 17th century. www.goldsboroughhall.com or call 01423 867321.
