Quick Recipe: Pepperonata frittata
Serves 13 eggs50ml/2fl oz milk25g/1oz butter4 tbsp pepperonatahandful of crumbled goat's cheese or Cheddarsalt and freshly-ground pepper
Pre-heat the grill to 200C/400F/ Gas Mark 6
Mix the eggs and milk, seasoning well.
Take a deep frying pan and melt the butter over a medium heat.
Add the egg mixture and keep pushing it to the edge of the pan until it begins to set.

Hide AdWhen about 5cm/2ins of the frittata has begun to set around the edges, add the pepperonata to the centre of the pan and cook for a further 2-3 minutes without mixing it.
Then place the pan under the grill for 2-3 minutes, making sure the handle is out of the heat.
Remove from the grill and scatter with the cheese to give a creamy finish.
Slice into wedges and serve with crisp green salad.
