Here are a few fruity cocktail concoctions to experiment with this Spring.

Ey Up Rhubarb

Ingredients:

25ml Slingsby Rhubarb Gin12.5ml Hibiscus Syrup20ml Fresh Lemon JuiceRose Lemonade to top

Combine the Rhubarb gin, hibiscus syrup and lemon juice in a cocktail shaker. Add ice, then shake and fine strain into a coupe glass. Top with rose lemonade and garnish with a rose petal.

Rhubarb bramble

Ingredients:

50ml rhubarb gin30ml rhubarb sweet tea syrup20ml lemon juice10ml mulberry gin

Method:

Churn the Rhubarb gin, tea and lemon juice with crushed ice. Cap and drizzle over mulberry gin, and then garnish with a lemon wedge and a blackberry.

Confection Cocktail

Ingredients:

30ml rhubarb gin20ml rhubarb and rose hip cordial200ml Bitter lemon tonic

Add all of the ingredients into a short glass over ice. Stir down and garnish with an edible flower, sweets, or a sherbet rim for that extra sugary flavour.

Rhubarb Fizz

Ingredients:

50ml rhubarb gin50ml pink grapefruit25ml elderflowerTop Grapefruit lemonade

Method:

Add of the all ingredients into a tall glass over ice and stir. Once mixed, garnish with a wedge of pink grapefruit to add a bit of zing.

Rhubarb Rossini

Ingredients:

25ml rhubarb gin20ml elderflower liquor10ml raspberry pureeTop with champagne

Method:

Shake the puree, elderflower and gin. Fine strain into a flute or coup glass and top with a splash of champagne. Complete your tipple with a blackberry garnish on the rim.
